Healthy Chocolate Nice Cream

This 4-ingredient nice cream recipe is full of yummy whole food ingredients and is so much healthier than your standard store bought ice cream. It has no refined sugar, fillers, preservatives or colours added but it boasts the same creamy deliciousness of traditional ice cream.
What is Nice Cream anyway? It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently.
You don’t need one of those special ice cream churning machines, you simply use frozen bananas, a splash of milk to get things blending along with a dash of optional vanilla (or other flavourings) – that’s it!
It sounds too good to be true doesn’t it? Ice-cream just out of bananas – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.
It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the deliciousness before your spoon even begins to melt into the bowl.
You can satisfy an ice cream craving guilt-free anytime with this “nice cream“! Seems so simple, that it feels like you are cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!
Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy!

Ingredients

  • 2-3 bananas, sliced, frozen
  • 1/2 cup coconut cream *see note below in instructions
  • 1 tablespoon cocoa or cacao powder
  • 1 teaspoon vanilla extract

Optional Toppings

  • Chocolate chips or cacao nibs Chopped nuts Shredded coconut Nut butter such as peanut or almond

Instructions

  • Note: Place a can of coconut cream or milk (full fat) in the fridge or freezer for at least two hours (or overnight) before making this recipe to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, to drink, or discard.
    Place frozen bananas, coconut cream, cocoa and vanilla in food processer and process until smooth and creamy. 
    Serve straight away or freeze for later. If frozen,allow to thaw for 20 minutes, or until desired consistency.
    To serve sprinkle with your choice of toppings.
