Healthy As Rocky Road Slice

If you want to make a decadent chocolate treat but want to avoid processed sugar, then look no further than this healthy fruit and nut rocky road made from clean, whole food ingredients. I guarantee it will be a delicious anytime snack or after dinner treat for you or your family.
This rocky road is a super simple recipe that comes together quickly. It is made in one bowl so clean up is easy peasy. The chocolate element is made from scratch using coconut oil and cocoa powder, sweetened with honey.
Use this recipe as a general guide, mixing and matching the fruit and nuts to whatever you have in your pantry. I chucked in some in hemp protein powder, almonds, macadamias, pistachios...

Ingredients

  • 1 cup coconut oil, melted
  • 1 cup almond meal (ground almonds)
  • 1/2 cup cocoa powder
  • 1/2 cup peanut (or any nut or seed) butter
  • 1/2 cup honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 cup roasted chopped nuts,  almonds, peanuts, pistachios
  • 1/2 cup cranberries dried - or chopped dates
  • 1/3 cup raspberries, dried or freeze dried - or more cranberries
  • 1 cup puffed cereal – rice, spelt, quinoa or popcorn
  • 1/4 cup coconut flakes
  • 1/4 cup mini marshmallows 

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the slice out easier for cutting.
    In a medium bowl, stir together coconut oil, almond meal, peanut butter, cocoa powder, honey and vanilla extract. When well combined, add the nuts, dried fruit, coconut flakes and marshmallows and stir them into the mixture.
    Pour the mixture into your prepared tin and spread to the sides. Tap the container to ensure pockets of air are released and place in the freezer to set.
    Once firm, use a sharp knife that you have dipped in boiling water and slice into 16-20 slices or squares (depending on what size you prefer).
    Store in the fridge or freezer. You can eat directly from either the fridge or freezer.
