Healthier Tiger Butter Fudge

Tiger Butter is a delicious, marbled candy, so creamy and so easy to make, it’s a treat your whole family will enjoy.
The first time I was introduced to the joys of tiger butter I wasn’t really sure what it was, but it looked like a creamy peanut butter base swirled with dark chocolate. One bite and I was in love.
I shudder now to think about how that treat took my blood sugars for a wild ride. But the memory of it stayed with me for decades, and now I can indulge in my own delicious much healthier tiger butter. I make this delicious candy a few times a year and it always disappears faster than I would like.
Tiger butter is a peanut butter candy bark made with white chocolate, with dark chocolate swirled in like tiger stripes. It’s on the soft side, so it’s a little like fudge but not quite. It’s truly rich and delicious, and a little goes a long way.
Most conventional recipes for tiger butter call for copious amounts of condensed milk along with white chocolate and dark chocolate chips. Needless to say, the sugar content is through the roof.
I have ‘healthified’ it somewhat and the biggest change in the recipe is that you will be using homemade condensed milk in this recipe, free of the LOADS of sugar in store bought stuff.
The facts are… manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water.
I’m sure you’re asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures.
Its always about the convenience to them, rather than people’s health.
But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful fudge candy, you get all the real, natural flavors - no artificial food flavorings here! Each little cube is like a piece of heaven.
The recipe for the sugar free homemade condensed milk is below in notes. It really very easy to do and you can keep some in your fridge so its ready to add a dollop on EVERYTHING for a super healthy treat.

Ingredients

Peanut Butter Layer

  • 1 cup white chocolate chips
  • 3/4 cup creamy peanut butter
  • 1/2 cup condensed milk, store bought or for a healthy sugar- free homemade recipe see below in notes
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Chocolate Layer

  • 1 cup dark chocolate chips
  • 1/2 cup condensed milk, store bought or for a healthy sugar- free homemade recipe see below in notes
  • 1 tablespoon coconut oil

Instructions

Peanut Butter Layer

  • If you are going to be making your own sugar-free condensed milk, do this first so its ready when you go to make the fudge. Recipe below in notes.
    Line an 8 x 8” baking pan o dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the candy out easier for cutting. Or use a silicon candy mould or baking dish.
    Place the white chips, condensed milk and coconut oil in a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method- (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.
    Once melted, stir in the peanut butter and vanilla and mix well.
    Pour into the prepared baking dish and smooth into an even layer with a spatula or back of a spoon.

Chocolate Layer

  • Place the dark chocolate chips, condensed milk, and coconut oil in a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method- (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.
    Pour the chocolate layer over the peanut butter layer in 4 lines, then drag a knife through the chocolate lines in a haphazard manner to make tiger stripes. Be careful not to over swirl as it will get muddy looking.
    Cover with plastic wrap and place in the refrigerator to set for at least 2 hours.
    Lift the fudge from the baking dish by pulling up on the parchment paper. Cut into bite size squares or little bars.
    Storage Information: Once you have chilled and cut the tiger butter, store in the fridge in a covered container for up to 10 days. It’s fine out of the fridge for an hour or two, but can get a bit too soft after that. You can also freeze it for several months.
     
     

Notes

.There are some recipes that are just better with condensed milk (think fudge and ice cream!)
