Ingredients

  • 22 medjool dates
  • 1/2 cup creamy peanut butter
  • 1/2 cup peanuts, unsalted, chopped
  • 1 1/2 cups chocolate chips
  • 2 teaspoons coconut oil, melted
  • Sea salt - optional

Instructions

  • Cover a baking sheet with parchment paper, then prepare the dates: slice the dates open and remove the pits.
Layer the pitted and sliced dates in a single layer, putting the dates close to each other, overlapping slightly.
Layer another piece of parchment paper over top of the dates and use a glass to press / smash down the dates to create a single, thinner layer. The goal is not to have any gaps so that base layer is strong and can support the upper layers.
Remove the parchment paper and drizzle the peanut butter over the flattened dates.
Then sprinkle the chopped peanuts over top of the peanut butter.
Melt the chocolate and coconut oil in a microwave-safe bowl in 20 second increments in the microwave, stirring after each 20 seconds until melted.
Finally pour the melted chocolate over the date-peanut layers and if needed use the back of a spoon to gently spread the chocolate to make sure all of the edges are covered.
Add a sprinkle of sea salt if desired.
Refrigerate for at least 1 hour or freeze for at least 30 minutes to set. Use a sharp knife to slice into pieces or break into pieces and enjoy!
