Today I bring you a healthy fudge recipe that is fast, easy and delicious. You will love it!  It is like regular fudge – super rich, uber decadent – but secretly healthy and guilt-free!  Yup, that means no butter, no truckloads of white sugar and no sugar laden, heavily sweetened condensed milk…  just pure, fudgy, nutty, chocolatey goodness and sweetened with dates.

It has that delicious decadent texture that seems hard to accomplish, but you will be surprised at how quick and easy it is to make. You can make a whole batch with only 15 minutes of hands-on time!

Originally this wholefood chocolate fudge was made with almond butter but, after trying alternatives, cashew butter was the real winner. Can’t have nuts? All good – substitute tahini (sesame seed paste) or sunflower butter.

As well as being really easy to make, this fudge is healthier than your average treat as it is made with wholesome REAL food ingredients. With the added protein powder it makes it more balanced than the traditional high carb, high sugar recipes.

Old fashioned recipes always had tons of sugar, carbs and fats. The new modern way it to add protein making the recipe more balanced and healthy. Eating protein-rich foods has many health and fitness benefits, including:

Healthier Chocolate Protein Fudge

Healthier chocolate protein fudge sweetened with dates! If you are looking for something sweet, but healthy, this is the perfect recipe. It tastes great and is a good way of getting extra nutrients into your diet while satisfying your sweet tooth.

Ingredients

  • 2 cups dates, soaked 30 minutes and drained
  • 2 cups dark chocolate chips or chopped dark chocolate
  • 1/2 cup cashew (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract
  • Flaky salt - optional

Instructions

  • Line a 7 x 5-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    Add dates, cashew butter, protein powder and vanilla extract to a food processor and process until smooth. Some small chunks of dates are okay.
    Melt the chocolate next.
    Place chocolate chips and coconut oil in a dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once the chocolate and coconut oil are melted, add to the date mixture and process again until well combined.
    Once mixed, transfer the mixture to the lined pan and smooth out with a spatula or back of a spoon.
    Sprinkle with flaky salt if desired. Set in the fridge 2+ hours, then use a sharp knife to cut into 12 (or more smaller) squares.
    Store in an airtight container in the fridge for up to 2 weeks. Or freezer for up to 3 months.
