Need a sweet treat but don’t want a ton of cookies hanging around your house tempting you to eat the entire batch? This single serve, no bake, frozen treat makes one perfect dessert in less than five minutes.
And all you need is a bowl, a spoon, and your freezer. And if you want more than just one cookie, I promise that you can double the recipe and make two…your secret is safe with me!
I wish I could remember where I originally saw this recipe for a no bake, single serve “cookie”. But needless to say I was drawn to the idea of making a single cookie without turning on the oven! I’m always looking for small batch recipes – and it doesn’t get smaller than a single serving!
After all, who doesn’t love a good protein cookie or bar? They are among the most tasty, filling, and convenient healthy snack ideas you can enjoy. If you are looking to make homemade bars, though, then you have probably got an inkling that DIY’ing it has certain advantages.
The main draw with going the homemade route is the infinite customizability. Many protein, energy bars on the market aren’t fit for everyone’s dietary needs (gluten free, vegan, nut-free etc), but when making your own, you can make sure that they are!
Store bought protein bars can be expensive. Even the cheaper brands that tend to have more added sugar and other unnecessary ingredients are still a few dollars per bar. Not to mention the bars with more natural ingredients.
Also when you make your own, it comes out so much cheaper than buying from the store. Whip up a batch and you might never want to spend money on another packaged protein bar ever again.
This homemade recipe does not have any nasty preservatives and artificial sweeteners and is packed with healthy fats. It tastes WAY better than store bought bars, and is packed with clean and nutritious ingredients.
This gorgeous single cookie for one has a chewy texture and are made with just a few simple ingredients that you can find at almost any grocery store. This is one of my go-to recipes to make so I can have a quick snack to grab on a busy day. In my opinion, they are a great post-workout snack or the perfect snack to curb your sweet tooth.
This recipe doesn’t require any baking. You simply mix the ingredients together, shape into a cookie shape and freeze. Done!
This cookie tastes like a delicious dessert, but is secretly good for you. Combine your favorite protein powder with fruit, yogurt and a few other simple ingredients for a post workout treat or any time snack.
I always have one (or more) of these on hand for an easy snack! Protein bars are a staple in my diet, as is chocolate. Once I learned how much cheaper AND tastier homemade protein bars are, I completely eliminated buying protein bars from the grocery store.
Feel free to use your favorite protein powder, and the recipe can easily be doubled or tripled if you want to make up a few more for make ahead meal prep. With around 20g protein per cookie (depending on your protein powder brand).
Why buy high protein snacks when you can easily make your own? One thing about me is that I love high protein snacks. Protein bars and cookies have been my weakness for many years. Over a long period of time, I’ve tried many different brands. Most tasted ok, but one thing wasn’t – the ingredient list.
I’ve been trying to consume less to none artificial sweeteners such as aspartame or sucralose because they mess up with my body. Constant cravings for sweets, stomach aches, bloating…Nah, it’s not worth it. So I decided to satisfy my cravings with a homemade single serving protein cookie. Healthy, macro-friendly and sweetened naturally. Welcome to my latest obsession, I LOVE it!
Why you will love this recipe:
Healthy and macro-friendly also gluten-free, dairy-free, oil-free, eggless and free from refined flour and no additives.. Wholesome ingredients. No hidden sugar – or worse, corn syrup!
Quick and easy. You only need a bunch of simple ingredients and 5 minutes of your day, anyone can make it. It takes even less than a trip to the supermarket, choosing the right product and waiting in line to pay.
Extra delicious. A huge cookie filled with berries, yogurt and nuts – all good stuff. It tastes so much better than anything you could buy. Try this recipe and satisfy the cravings while hitting your macros.
Budget-friendly. One packaged cookie can cost a few dollars, and most don’t even taste good. But this frozen, single serve, protein cookie is different, because you are going to make it at home.
If you have been searching for a protein snack that’s made with minimal ingredients, truly healthy, and tastes DELICIOUS, this is the recipe for you!
I can almost guarantee that the first time you make this cookie it will not be the last. In just the past month I have made the recipe at least 10 times and I have completely stopped buying protein bars and cookies at the grocery store.
I also threw in some chocolate chips to sprinkle on top to add some texture and crunch… because… well… who really needs a reason for chocolate?
Create your own masterpiece – my latest version was macadamia nuts, dried blueberries with tahini (sesame seed butter) and coconut. Oh my! So YUM! I lusted for it all afternoon after making it! 😊
Giant Frozen Yogurt Cookie For One
Ingredients
- 1/3 cup plain, thick Greek yogurt
- 1/3 cup berries (or any other fruit), fresh or frozen
- 1 tablespoon desiccated coconut or oat or almond flour
- 1 scoop protein or collagen powder
- 1 tablespoon walnuts, chopped (or any other nuts or seeds)
- 1 teaspoon peanut (or any other nut) butter
- 1/2 teaspoon vanilla extract
- 1 teaspoon honey or maple syrup (only if needed)
Toppings Optional
- 1 tablespoon chocolate chips
- 1 tablespoon chopped nuts, raw or toasted
- 2 teaspoons desiccated coconut
- One popsicle stick
Instructions
- Add yogurt and berries to a small bowl and mix together mashing the berries a bit with a fork to break them up. Add protein powder, coconut, walnuts, peanut butter and vanilla and mix until combined. Taste test and honey or more vanilla if you think its needed.Place a small piece of parchment paper on top of a small plate. Add the mixture to the middle of the parchment paper and spread into the shape of a cookie. You can make one giant cookie or two smaller ones. It does not matter as to how many. I find the smaller ones easier to manage and eat. Keep it around ½ inch thick and insert the popsicle stick into the center making sure its well covered in the mixture so it holds firm when you are eating it. Sprinkle chocolate chips and coconut flakes on top gently pressing them in so they don’t fall off when you eat this bad boy!Place in freezer for 2-4 hours until solid. When ready to serve or eat, simply take out of freezer 5 minutes before to allow the cookie to soften a bit.
