Giant Frozen Yogurt Cookie For One

This Giant Frozen Yogurt Cookie For One is an awesome homemade, protein-rich, super ‘good-for-you’ snack.This healthy frozen yogurt, fruit and nut filled cookie will satisfy your sweet tooth without guilt.

Ingredients

  • 1/3 cup plain, thick Greek yogurt
  • 1/3 cup berries (or any other fruit), fresh or frozen
  • 1 tablespoon desiccated coconut or oat or almond flour
  • 1 scoop protein or collagen powder
  • 1 tablespoon walnuts, chopped (or any other nuts or seeds)
  • 1 teaspoon peanut (or any other nut) butter
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon honey or maple syrup (only if needed)

Toppings Optional

  • 1 tablespoon chocolate chips
  • 1 tablespoon chopped nuts, raw or toasted
  • 2 teaspoons desiccated coconut
  • One popsicle stick

Instructions

  • Add yogurt and berries to a small bowl and mix together mashing the berries a bit with a fork to break them up. Add protein powder, coconut, walnuts, peanut butter and vanilla and mix until combined.
    Taste test and honey or more vanilla if you think its needed.
    Place a small piece of parchment paper on top of a small plate. Add the mixture to the middle of the parchment paper and spread into the shape of a cookie. You can make one giant cookie or two smaller ones. It does not matter as to how many. I find the smaller ones easier to manage and eat. 
    Keep it around ½ inch thick and insert the popsicle stick into the center making sure its well covered in the mixture so it holds firm when you are eating it.
    Sprinkle chocolate chips and coconut flakes on top gently pressing them in so they don’t fall off when you eat this bad boy!
    Place in freezer for 2-4 hours until solid.  When ready to serve or eat, simply take out of freezer 5 minutes before to allow the cookie to soften a bit.
