Ice cream bars are a popular store-bought confectionary of ice cream molded in popsicle form, in many various flavours, coated with chocolate.

Store bought ice creams, as tasty as they are, most of the time are NOT healthy. Unfortunately. So, guess what?! We are making them ourselves and making a healthier version.

Two of my favorite things…ice cream and sprinkles! So fun! And so yummy, too! I’m all about the sprinkles these days because everything tastes better with sprinkles. Right?

You can’t really get anything more festive than colourful sprinkles and ice cream and sprinkles are a marriage made in heaven and probably one of the most enjoyable treats that exist!

These Funfetti ice cream bars have sprinkles on the inside and the outside! However, if you believe in such thing as too much sprinkles, you can use chopped nuts or chocolate chips as fantastic substitutes.

So here I have a recipe for you for delicious ice cream bars packed with protein, fiber, healthy fats, wholefoods and filled and topped with rainbow sprinkles for a little fun twist.

The last time I bought a store bought ice cream I was looking forward to eating it after dinner at ice cream time! Unfortunately, it was pretty disappointing. It was overly sweet and all I could taste was sugar. So I took matters into my own hands and made a much healthier, refined sugar-free version, which I think is way more delicious!

Next time you buy ice cream bars at the super market you can check the ingredients. You will be surprised by how many ingredients are used. Besides lots of chemicals and flavour extracts (or natural flavours!!) Yeah right! You will find a ton of sugar in them. This quickly loads up to about 20 g of sugar per ice cream. And all of this in one single ice cream!

Of course, not every single ice cream has this nutritional value, but there are simple and easy ways to choose a healthier ice cream, simply make it yourself.

Ice cream is my favorite dessert! No doubt about it. And making homemade ice cream allows you to experiment and include just the ingredients and tastes that you like and prefer.

These ice cream bars are really easy and quick to make, it you don’t count the freeze time. You have a crunchy chocolate cover over a super healthy, creamy, vanilla ice cream. You can of course adapt the taste of the vanilla ice cream and make it chocolate, salted caramel or your favorite fruit flavor.

These bars are perfect to serve for a delicious afternoon snack or dessert. They are rich, creamy, and not overly sweet, making them even more delicious (and way healthier) than the original.

Equipment

  • popsicles mold
  • 12 Popsicle sticks

Ingredients

  • 2 bananas
  • 1 cup cashews, soaked 3+hours and drained
  • 1 cup full fat coconut milk or cream
  • 1 cup dates, soaked 30 minutes and drained
  • 2 scoops protein or collagen peptides powder
  • 2 tablespoons cashew or almond (or any other nut) butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons sprinkles

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 2 tablespoons sprinkles

Instructions

  • Add bananas, cashews, yogurt, coconut milk, dates, protein powder, peanut butter and vanilla extract to a blender or food processor and process until completely smooth and creamy.
    Pour the filling into 12 regular sized popsicle molds or 20 mini molds. The amount of ice cream bars you get may vary based on the popsicle molds you have. Add popsicle stick to each one.
    Place your popsicle molds in the freezer. Make sure to freeze them until they are frozen solid. This will take about 4-6 hours.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted pour into a glass of something tall and slim to make it easier to coat your ice cream bars in melted chocolate.
    Remove the bars from freezer and after checking they are firm and set, remove from popsicle molds.
    Use the popsicle stick to hold each bar and dunk into the melted chocolate, let any excess drip back into the glass, then place on a rack to dry. Add the sprinkles or your choice of toppings before the chocolate sets.
    Place on a parchment paper lined plate and back in the freezer to set the chocolate.
    Put the bars into the freezer for at least 4 hours. Once the chocolate is set, place ice cream bars in freezer bags for a quick and easy healthy treat any time!
    They last in the freezer about 3 months if stored in an airtight bag.
