Fruity Frozen Yogurt Bites

These Frozen Yogurt Bites are fun to make, delicious to eat, full of simple and healthy ingredients and pretty too. This recipe has a simple granola base then different coloured fruits mixed up with yogurt to spread on top.
Protein packed, no-bake, and perfect to stash in your freezer to grab whenever the craving for a special 'something' hits. The recipe also makes a super delicious dessert, loaded with protein, fruits and nuts.
With crunchy cereal and colourful fruit topping, these super-simple frozen yogurt bites are the perfect refreshing snack.
Most fruit will work well in these bites, chop it, slice it, or use small fruit whole, like all sorts of berries, cherries, an apricot, and some green grapes.
The more colors you use the prettier it will be  You can use a flavored yogurt as the base for more sweetness and flavour. The base layer uses your favorite ready made granola. It’s not really a crust, it kind of mixes in with the yogurt as you spread it into the pan.

Ingredients

  • 1 cup full-fat plain Greek yogurt
  • 1 cup fruit of choice, cut into small pieces as needed
  • 1-2 tablespoons honey or maple syrup
  • 1 cup granola

Instructions

  • Arrange 12 cupcake liners in a muffin tin, on a plate, or on a baking sheet and set aside.
    Make the fruit and yogurt filling: Add the fruit to a medium bowl and drizzle the honey over top. Using a fork or the back of a spoon, mash the fruit with the honey, until the fruit is smashed, with small pieces remaining.
    If you’re using larger fruit, like strawberries, you can dice it into smaller pieces to help make this a little easier. If you’re using smaller/juicier fruit, like raspberries, they’ll mash pretty easily on their own.
    Stir in the Greek yogurt and mix until combined.
    Assemble the bites by placing a teaspoon or two of the granola in the bottom of each prepared cupcake liner. Top with a spoonful of the frozen yogurt mixture.
    Place a piece of fruit or a sprinkle of granola on top of the yogurt for a fun garnish.
    Freeze: Place the frozen yogurt bites in the freezer to set for at least 2 hours before serving.
    NOTES
    Storage: Frozen yogurt bites will keep stored a freezer bag or container in the freezer for 2-3 weeks.
