Many of us resolve to do better with our eating and exercise, however, even with the best of intentions, busy schedules can make it difficult from time to time.
Despite this, it is important to prioritise our physical health and fitness. While this time I won't be discussing my favourite gym routine, I still wanted to share a healthy snack recipe that is perfect for pre-or post-workout energy – homemade frozen yogurt fitness bars.
Snacking can be a tricky part of maintaining a healthy diet, but it doesn't have to be. One way to keep your snacking habits in check is to have healthy, convenient options on hand.

Ingredients

  • 2 cups Greek yogurt, 1 cup plain and 1 cup vanilla
  • 1 cup fresh or frozen fruit, chopped
  • 1/2 cup nuts, chopped - almonds, walnuts, pistachios, etc.
  • 1/2 cup oats, instant or quick
  • 1/2 cup any protein powder
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon peanut (or any other nut or seed) butter
  • 1 teaspoon vanilla extract
  • 4 squares 4 squares dark chocolate - grated, for decoration

Instructions

  • Line a 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a medium bowl, mix together all ingredients then scoop into the lined pan and spread mixture to the edges and smooth out with a spatula or back of a spoon.
    Grate the chocolate over, cover the pan with plastic wrap and freeze yogurt mixture for 4 hours or overnight.
    Remove the pan from the freezer and let it thaw for15 minutes. Make 12 bars by using a knife to cut 4 lines x 3 lines.
    Place each bar in its own individual snack bag and put back in the freezer until you are ready to eat your frozen yogurt bar for breakfast, afternoon snack, or dessert!
