Servings 6

Ingredients

  • 3 ripe bananas
  • 1/2 cup cashew, almond or any nut butter
  • 1 tablespoon almond or coconut flour
  • 1 tablespoon honey or maple syrup
  • 1/2 cup peanuts, roasted, chopped

Date Caramel Layer

  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup any milk

Chocolate Drizzle

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a baking sheet with parchment paper or a silicone baking mat.
Peel bananas and cut them in half lengthways. Place them on your lined baking sheet.
In a mixing bowl, stir together the cashew butter, almond flour and honey until well combined and thick.
Make the date caramel layer by combining dates and milk in a blender and blend until very smooth. If the sauce is too thick to pour out of the blender, add just a touch more milk and blend again.
Place banana halves the lined baking tray. Spread a layer of the date caramel mixture followed by a layer of cashew butter mixture on each banana half. Around a tablespoon of each but just divide both mixtures up amongst them.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Drizzle the chocolate over top of the banana halves using a spoon and then sprinkle the chopped up roasted peanuts over the top of each one.
Place the bananas in the freezer 1-2 hours until hardened.
Note:  Frozen bananas have a tendency to thaw really quickly, so I like to store these in the freezer at all times.
Once they have frozen initially on the baking sheet, you can transfer them to an airtight container or a freezer-safe zip-lock bag until ready to enjoy.
I like to eat these straight out of the freezer, but if you think they are too hard, you can let them sit at room temperature for a few minutes before enjoying.
