FroYo Berry Bites

Ingredients

Nutty Base Crust

  • 1 cup almonds, walnuts or cashews or a mix
  • 1/2 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 1/4 cup peanut (or any other nut or seed) butter
  • 1/4 cup coconut oil, melted

Vanilla Yogurt Layer

  • 1 medium banana, sliced, frozen
  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons vanilla extract

Topping

  • 2 cups fresh fruit, chopped or sliced, leave small berries and grapes whole

Optional Toppings

  • chopped nuts
  • coconut shreds
  • drizzle peanut butter
  • granola

Instructions

Nutty Base Crust

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or you can use a 12 cavity silicon muffin pan.
    Place almonds, oats and coconut into a food processer and process until broken down and crumbly. Add dates and coconut oil and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture and different sized “bits” in your yogurt bites base crust.
    Press the base mixture into the bottom of your pan or dish evenly (or your muffin pan cups). Place in freezer while you prepare the yogurt layer.

Vanilla Yogurt Layer

  • In a food processor place banana, yogurt, honey and vanilla extract and process until smooth and creamy.
    Remove the nutty base layer from the freezer and pour the yogurt mixture on top of base in pan or muffin cups. Using a spatula or back of a spoon spread out evenly.
    Place the berries evenly over the yogurt.  Optional: Sprinkle chopped nuts, coconut or granola over the top for a little more crunch.
    Place the sheet in the freezer for at least 3 hours.
    Remove from the freezer and let the bars sit for about 10 minutes to soften a bit and then slice into 10-12 squares or pop out of molds. Serve immediately.
