Fro Yo Berry Bites

These delightful little frozen bites are fun to make, delicious to eat, and full of simple and healthy ingredients, and pretty too. This recipe has a simple nutty base then a yogurt layer and colourful fruit as a topping.
Protein packed, no-bake, and perfect to stash in your freezer to grab whenever the craving for a special 'something' hits.
The beauty of this recipe is that you can add as much (or as little) sweetener as you like, use different nuts or seeds in the base or any fruit and berries that you like to make it in your way and taste.
Whether you're looking for an easy, on-the-go breakfast, an any time sweet snack, or a delicious dessert, these fro-yo bites are the answer. They come together in only 10 minutes - just make sure to give them plenty of time to chill in the freezer so that they set completely. Make them the night before, then enjoy the easiest breakfast or afternoon snack the next day.
I prefer to use plain yogurt - with honey and vanilla for flavor and sweetness - instead of a pre-flavored yogurt to control the sweetness. You can really get creative with your fruit additions. I went with strawberries, and raspberries, but feel free to use your favorite berry in here - as long as it fits into the bite!
Most fruit will work well to top these bites. The more colors you use the prettier they will be. You can use a flavored yogurt as the base for more sweetness and flavour. The base layer uses a few simple ingredients, but you can also use your favorite ready-made granola instead of the nuts and dates.

Ingredients

Base Crust

  • 1/2 cup almonds, or any other nuts
  • 1/2 cup oats, instant or quick
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 2 tablespoons coconut oil

Yogurt Layer

  • 1 1/2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract

Topping

  • 1 1/2 cups fresh berries, chopped or sliced

Instructions

Base Crust

  • Line a 12-cup muffin tin with silicone or parchment cupcake liners, or add directly to nonstick muffin tin.
    Place almonds, oats and coconut into a food processer and process until broken down and crumbly. Add dates and coconut oil and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture and different sized “bits” in your yogurt bites base crust.
    Spoon 1-2 tablespoons into the bottom of each muffin cup.
     

Yogurt Layer

  • In a medium bowl, mix together yogurt and honey. Spoon 2 tablespoons into each muffin cup, covering the crust.
    Top with fresh chopped berries. Freeze until firm, about 6 hours. To serve, remove from muffin pan and allow to sit at room temperature for 8-10 minutes.
