Date Snickers (Peanut Butter Yogurt Dates)

Date Snickers make for the best easy, healthy snack or treat! Medjool dates filled with vanilla Greek yogurt and creamy peanut butter, then covered in melted dark chocolate and topped with chopped peanuts and a dash of flaky salt.
Oh my goodness, these are SO darn good! If you’ve never tried date snickers, you are in for a real treat. They are so very easy to make and will satisfy all your chocolate candy cravings.
This is another of those viral TikTok recipes that has done the rounds of the internet. And for good reason. They are really really good and I cannot stop eating them. They literally taste like Snickers bars!
I love making a big batch of these stuffed dates and keeping them in the freezer for any time I have a chocolate craving (which is basically always). It really is like you are having your favorite candy bar, but made healthier!
When you are craving something sweet but don’t want to heat up the oven or spend a lot of time making a dessert, these bites are the perfect solution! These bad boys really are the perfect indulgence. They remind me of Snickers ice cream bars,but in bite form and much healthier…
….and OMG… I dare you to just eat one! 😉

Ingredients

  • 12 large Medjool dates
  • 1/3 cup vanilla Greek yogurt (about 1-2 tablespoons per date)
  • 1/4 cup creamy peanut butter (1-2 teaspoons per date)

Chocolate Coating

  • 3/4 cup chocolate chips
  • 1/2 tablespoon coconut oil
  • 1/4 cup whole peanuts
  • 1-2 tablespoons chopped peanuts
  • Flaky sea salt

Instructions

  • Line a baking sheet with parchment paper. Remove the pits from the dates. Melt the peanut butter for 20-30 seconds in the microwave and add to a bowl with the yogurt. Whisk until smooth and creamy.
    Spoon the peanut butter yogurt into the dates and place each one on the lined baking sheet. Place a couple of whole peanuts on top. Place in freezer about 30 minutes while you melt the chocolate coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Gently roll each date in the chocolate until fully covered, using one or two forks to hold each date. Or you can skewer each date like a popsicle and dunk them in the melted chocolate. 
    Let the excess chocolate drip off the date and then place back onto the parchment lined baking sheet. After you place each date back onto the baking sheet, sprinkle the tops with crushed peanuts and a sprinkle of flaky salt and place back in the freezer until hardened, 15-20 minutes.
    Keep stored in the freezer. But allow them to soften slightly after removing from the freezer before enjoying - about 5 minutes.
    TIP:  Work quickly when dunking the dates, as the melted chocolate will harden quickly!
