They remind me of a lemon cheesecake but are most definitely a more healthy version in a convenient bite-sized package!Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book. Moreish snack balls, bliss balls, energy bites, call them what you like, are one of the easiest things to make, and they are a perfect little nutrient-dense bite for a satisfying and beneficial snack! This recipe is full of healthy ingredients like protein, healthy carbohydrates and fats along with fibre, minerals and vitamins. Ingredients
- 1 cup cashews
- 1 cup desiccated coconut
- 1 lemon, juice and zest
- 2 tablespoons rice malt syrup or honey
- 3/4 cup desiccated coconut extra, for rolling
Instructions
- Add the cashews, coconut, rice malt syrup, lemon juice and zest to a food processor.Blend until broken down and mixture becomes sticky and holds together when pressed between your fingers.Be careful not to over process as its nice to have some different sized ‘bits’ in your lemon snowballs.Taste test and add more lemon or sweetener if you think it needs it.Scoop 2 tablespoons of the mixture into your palm and form into a ball.Transfer to a plate. Repeat with the remaining mixture then roll in desiccated coconut. Makes 12 snack balls.Store these energy balls in the fridge in an airtight container for up to 4 days.Store in the freezer for up to 2 months.
