Servings 12

  • 1 cup cashews
  • 1 cup desiccated coconut
  • 1 lemon, juice and zest
  • 2 tablespoons rice malt syrup or honey
  • 3/4 cup desiccated coconut extra, for rolling

  • Add the cashews, coconut, rice malt syrup, lemon juice and zest to a food processor.
Blend until broken down and mixture becomes sticky and holds together when pressed between your fingers.
Be careful not to over process as its nice to have some different sized ‘bits’ in your lemon snowballs.
Taste test and add more lemon or sweetener if you think it needs it.
Scoop 2 tablespoons of the mixture into your palm and form into a ball.
Transfer to a plate. Repeat with the remaining mixture then roll in desiccated coconut. Makes 12 snack balls.
Store these energy balls in the fridge in an airtight container for up to 4 days.
Store in the freezer for up to 2 months.
