Coconut Avocado Popsicles

I know we should not eat ice cream for breakfast. But this time, with this recipe, you will get an exemption. It healthy and perfect for serving for breakfast. It has loads of nutrition via the avocado and other ingredients for the first food of the day, just in a colder form.
If you are a lover of avocado and chocolate flavor, this super easy recipe is perfect for you! It’s a delicious, creamy, and chocolate-y frozen treat that will become a favorite!
If you are short on time, this is an ideal recipe for you, too. These pops are probably one of the quickest ice-creams you can make – it’s just a case of blend and freeze. If you don’t have ice-lolly molds, just freeze the mixture in a lidded plastic container and serve as ice-cream.
Creamy yet zingy and delicious pops, easy-to-make dessert or perfect afternoon or after dinner snack. Dip them in melted chocolate and top with crushed nuts or your favourite toppings for some decadence.

Ingredients

  • 1 ripe avocado, peeled and stone removed
  • 1 cup coconut milk or cream (or milk of choice)
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon any nut or seed butter
  • 1 tablespoon honey or maple syrup
  • 1/2 -1 lime or lemon – juice and zest

Chocolate Topping

  • 4 oz chocolate chips or bar chopped
  • 1 tablespoon coconut oil
  • 1/4 cup chopped nuts, toasted coconut or sprinkles for topping

Instructions

  • In a food processor, puree avocado, coconut milk, coconut oil, nut butter, honey, lime or lemon juice and zest. Process until well combined, smooth and creamy.
    Taste mixture. If it is not sweet enough to your liking, add additional honey as needed.
    Pour mixture into popsicle molds until almost full. Insert wooden sticks and place in freezer for at least 3 hours, or until the popsicles are solid. If you do not have popsicle molds, simply place in a lidded plastic container and serve as ice-cream.

Chocolate Topping

  • Over a double boiler (bain-marie), melt together chocolate chips and coconut oil until smooth. Or melt in a small dish in the microwave at half power in 20-30 second bursts stirring between each burst until melted and smooth.
    Unmold frozen popsicles. Dip in melted chocolate and roll in chopped nuts, toasted coconut or sprinkles or your favourite toppings. Or drizzle with more melted chocolate. Enjoy immediately, or store in the freezer until ready to serve.
