These naturally dyed blue, healthy almond coconut snacks are perfect if you want something sweet and satisfying. Super easy to make, full of flavor, and way healthier than anything store-bought.
They look absolutely stunning, and will give you a boost of energy and satisfy sweet cravings in an instant. They are also full of fibre, minerals and vitamins and these small but mighty morsels are a good way of incorporating more good stuff into your diet.
Another benefit is that they only need 10 minutes prep time and can be easily prepared in advance – stored in an airtight container in the fridge they will stay fresh for two weeks. Whenever you need a quick energy boost,  these beautiful blue treat balls are the ideal ‘grab and go‘ snack.
Now lets look at the incredible blue colour.
Blue Spirulina powder has been added to give a pretty vibrant blue effect.
Blue Spirulina, a well-known antioxidant superfood, is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina (blue-green algae).
It is super healthy, rich in protein, vitamins, minerals, iron, carotenoids and antioxidants and helps protect cells from damage. It is freeze dried to preserve its natural colour and nutrients.
You can get creative and add this beautiful nature product to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures!
You can add it to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods. For light blue shades, use just a pinch and for a more brilliant blue, use up to the full teaspoon (or more).

Servings 20


  • 1 1/2 cups almond flour (ground almonds)
  • 1 1/2 cups desiccated coconut
  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon blue spirulina powder
  • 1 lemon, juice and zest
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil


  • Add all the ingredients to the food processor and blend until it forms a thick smooth paste.
    Using a 1 tablespoon sized ice cream scoop - scoop the paste into a dome then knock out the dome onto a baking tray lined with paper or a baking mat. Will make around 20 (or more) domes depending on the size you wish to make them.
    Refrigerate the domes for around 40 minutes.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the domes and after checking they are firm and set, gently push a metal fork into the top so it is pierced on the fork. Carefully dip the bottom of each dome in dark chocolate.
    For added decoration you can pipe chocolate lines over the treats.
    Store in the fridge until ready to eat.
