Call them candy. Or call them “keto fat bombs.” Whichever you prefer, just know that these Chocolate Swirl Coconut Fudge Cups will leave you thinking they are too good to be true. They are not only ridiculously delicious, they are super easy to make with just a few ingredients and no baking required.

Could this recipe be too good to be true?! Have you ever taken a bite of a dessert and from the very first taste were like, “Omg. That is SO GOOD.” “So good I probably shouldn’t be eating it.” Indulgent taste. Melt in your mouth goodness. This fudge feels like it’s totally sinful. Silky. Creamy. Smoooooth.

But guess what! It’s HEALTHY. Fresh and DELISH – without needing any sugar, dairy, artificial sweeteners or JUNK. This delicious Fudge is my newest obsession. And once you try it, you will see why! I absolutely love experimenting with creative ways to make fudge *without* using ANY dairy or ANY sugar. But this one has this ONE special ingredient that is so insanely unique and delicious. I wanna drizzle it on everything.

What is it?? COCONUT BUTTER. This is a GAME CHANGER. What is Coconut Butter? If you are new to coconut butter, it’s probably confusing. No, it’s not like “real” butter. It’s more like almond butter, but made with blended coconut instead of blended almonds. It’s naturally mildly sweet (but there’s no sugar added.)  In short, it’s MAGIC. 😉

This is a big one – it *doesn’t* taste like coconut. Seriously! It has almost a shortbread flavor. And not like any nut butter you have ever had before. Because it naturally contains coconut *oil*, it hardens when chilled.

Coconut Butter has a very unique property that is solid and almost rock hard at room temperature and below, and liquid when heated/melted. It has a buttery silky texture and mouthfeel and mild flavor. These properties make it ideal for healthy candies and other dessert treats. On the other hand, there is no real substitute for coconut butter. There’s nothing else really like it.

It’s so amazing and versatile, it can transform into this healthy fudge and so many other tasty treats like cake balls, cream pies, candy, frosting, OH MY. You can buy coconut butter or you can easily make your own. The simple homemade recipe is below in notes.

As a long term fitness professional who is immersed in the health and wellness field, it’s fun to keep tabs on the latest trends. Traditionally, many trends over the last decade or more have (unfortunately) revolved around elimination diets in which certain foods or food groups are restricted or eliminated entirely. Think grains, dairy, carbs, fats, meat and so on.

In their place came foods marketed as low-calorie, low-fat, low-this, low-that were usually interpreted by novice consumers to mean “healthy”, right? However, we are now finally starting to see a paradigm shift. People are beginning to change their mindset around food and paying closer attention to not only the nutrition label, but also the ingredients. Consumers are becoming more interested in ADDING more nutritious ingredients to their diet, as opposed to eliminating foods or entire food groups.

What perhaps is even more exciting is that fat is no longer demonized. Items like coconut oil, avocado oil, and nut flours are being used more widely for their nutritional benefits with less emphasis on their caloric value. Healthy fats are in and the demon sugar is out due to sending your blood sugar levels on an unhealthy roller coaster ride every time you eat it. This is one of the most important things causing an epidemic of obesity and “lifestyle” preventable diseases.

You may be wondering what fat bombs are: If you know anyone following a keto (low carb, low sugar) lifestyle, I can almost guarantee they are whipping up fat bombs on the regular! They are a very popular craze for a reason and they are here to stay!

Low carb, keto, no-bake treats such as fat bombs are typically made with ingredients such as nut/seed butters, coconut cream, coconut butter or oil, cream cheese, butter, heavy cream, mascarpone cheese, olive oil, dark chocolate, avocado and little to no sugar to name a few.

They are called fat bombs because they incorporate healthy fats into desserts and snacks to keep you satiated between meals. They are easily portion controlled, and the richness of the healthy fats is very satiating to the taste buds. Oh, and did I mention they are easy to make? They only take a few minutes, so they are great to keep in mind for those times when you need a really fast dessert or sweet healthy treat.

Are fat bombs healthy? I know people have very different views on how much fat to eat in a day, so while my own diet is pretty high in healthy fat it will of course depend on your own personal views and dietary needs. Unlike many other fruits that are high in carbs, coconuts are mostly fiber and fat. Even better, the fat found in coconuts is MCT (medium-chain-triglycerides), which promotes a feeling of fullness and has been linked to other healthy benefits

These treats are not only high in heart-healthy fat, they are also completely free of refined carbohydrates and sugar, and the fat helps you to feel full and satisfied with just a small amount. So it’s not like cookies or candy where you could eat a ton and yet somehow still be just as hungry as before you started.

People trying to reduce their sugar intake often complain about the lack of sweets in their quest to get healthier. That’s because a low-carb way of eating is very focused on eliminating harmful sugar from your diet. But there are options for that lingering sweet tooth in your life.

Fat bombs are the perfect snack for anyone who tends to like desserts that are rich and delicious but not super sweet. Since they are so low in sugar, they are great for eating any time of the day, either on their own or as part of a meal – breakfast, afternoon, post-workout, or as a nighttime healthy snack instead of  potato chips or ice cream.

Chocolate Swirl Coconut Protein Fudge Cups

This real-food coconut butter fudge is easy — it only takes five base ingredients and it comes together in minutes.  Its an easy way to satisfy your sweet cravings in one delicious bite. It is sweet with a chocolatey coconutty flavor and melt-in-your-mouth texture.

Ingredients

  • 1 cup peanut (or any other nut or seed) butter
  • 1 cup coconut butter, store bought or homemade recipe below in notes
  • 1/4 cup protein or collagen peptides powder

Chocolate Swirl Topping

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Place paper liners in a 12-hole muffin pan or use a silicon muffin pan.
    In a medium microwave-safe bowl combine peanut butter and coconut butter and microwave for30-60 seconds, just until soft enough to stir all together.
    Or place in a small saucepan and warm up on the stove top.
    Once the peanut butter and coconut butter is soft add protein powder and mix until well combined. Pour into the lined baking cups 1/3-1/2 full. Set aside.
    Next melt the chocolate swirl topping.  

Chocolate Swirl Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Drizzle the chocolate mixture over the fudge cups, and swirl in with a butter knife or tooth pick.
    Let set in the refrigerator or freezer for at least 30 minutes until hardened.
