Chocolate Protein Pudding

This protein pudding is creamy, perfectly sweet and packs over 20 grams of protein per serving. Made with yogurt and protein powder for a simple and healthy dessert or snack.
It has a fluffy mousse like texture, though is a bit more dense and creamy than traditional mousse. Its thick so it sticks with you for a while and keeps you feeling full and satisfied.
If you’re looking for some sweeter, tastier ways to add more protein to your diet, look no further than this simple chocolate pudding that is low carb and high protein.
Store bought pudding is usually loaded with all sorts of unhealthy ingredients, so making it from scratch at home with this recipe is a much healthier option.
I love serving this with whipped coconut cream (recipe below in notes) and berries for a healthy dessert. But you can also top it with fresh fruit and a drizzle of peanut butter for a simple post workout snack or afternoon snack.
Why I love this recipe:
It needs just two main ingredients. Each protein pudding starts from a base that calls for protein powder and Greek yogurt. Its rich and decadent but also extremely satisfying from the protein and healthy fats and the perfect solution to quell a sweet tooth!
It has the perfect texture. Like cottage cheese pudding, the texture is thick, smooth, and incredibly creamy. You can customize it too. I love vanilla, chocolate, and peanut butter, but you can jazz it up any way you like! 
Add mix-ins. Nothing beats some chocolate chips, berries, coconut flakes, healthy granola, or even some honey or peanut butter.
You can easily make the pudding in 2 minutes with just a spoon and a bowl, no fancy equipment needed!

Ingredients

  • 1 cup Greek yogurt
  • 3/4 cup milk of choice – cold
  • 1 serving protein powder (vanilla or chocolate)
  • 1 tablespoon almond (or any other nut) butter
  • 1 tablespoon almond (or any other nut) butter
  • 1 tablespoon chocolate chips, optional

Toppings suggestions

  • Whipped coconut cream – recipe below in notes
  • Coconut flakes
  • Cacao nibs
  • Fruit (banana, strawberry, raspberry)
  • Drizzled almond butter
  • Chopped nuts
  • Hemp hearts

Instructions

  • Combine the protein powder, cocoa powder and milk in a bowl. Stir well until most of the lumps are removed. Start with 1/2 cup of milk and add a little at a time so it doesn’t get too runny.
    Once the lumps are gone, add the creamy almond butter and stir well until you have a pudding consistency. Add the chocolate chips if using, or sprinkle on top.
    Refrigerate up to 8 hours or serve immediately.
