Chocolate Hemp Protein Balls

I’m always nutting out ways to make life on the go easier. So here is the latest one. The answer to the modern dilemma - delicious, chewy, nut balls packed with extra protein to keep you fuelled up at work or play.

Buying protein bars in the store can make your grocery bill add up! It’s easier than you think to make a homemade version and they taste way better than anything store bought.  At least you can pronounce every ingredient in these yummy balls – a healthier version? Absolutely!

Ingredients

  • 1 cup almonds or walnuts
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/2 cup hemp hearts (seeds)
  • 1/2 cup desiccated coconut
  • 1/2 cup protein powder of choice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon cocoa or cacao powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  • Place almonds and coconut into a food processer and process until broken down and crumbly. Add peanut butter, protein powder, honey and vanilla extract and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture and different sized “bits” in your protein balls.
    Scoop the mixture out into a bowl and add the hemp seeds and chocolate chips if using and mix together until combined.
    If the dough seems too dry, add a splash of milk, water or extra peanut butter to soften it a bit.
    Use a cookie scoop or a regular spoon and roll into balls with about 1 1/2 tablespoons of “dough.” Use your hands to kind of smoosh the ingredients together and then roll into a ball in the palm of your hand.
    Place in the fridge to set for about an hour.
