Chocolate Dipped Kiwi Pops
These Kiwi pops are naughty and nice. They are healthy slices of tangy kiwi fruit dipped in chocolate for a bite-sized healthy snack or treat.Perfect for a party as everyone will love these beautiful, naturally sweet and citrus-ey-flavored treats. Perfect use for fresh or frozen kiwi and refreshing any time of year.Homemade popsicles are far better than the boxed supermarket ones. Such an easy to make healthy snack and the good thing is, these are oh so delish! Really, they are. And the recipe is brilliantly simple, children can make it.This is what you do: peel the kiwi, cut it up into three or four thick slices, place a popsicle stick in each slice, and freeze’em solid. Then, melt the chocolate chunks, cool the melted chocolate for a bit, dip the kiwi slices in the chocolate, and bam. We’re done.
Ingredients
- 4 kiwi fruit (use 4 kiwi for 8-10 pops)
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- lollipop sticks
Instructions
- Peel and slice Kiwi into thick (between 1/2″ and 3/4″) slices.Insert stick in each slice and place on parchment or wax paper and freeze for several hours.
Chocolate Coating
- Place chocolate chips and coconut oil in medium sized dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the kiwi pops and after checking they are firm, dip into the melted chocolate using a spoon (if necessary) to coat completely.Gently shake off excess and place on a rack to dry.Chocolate will set almost immediately.Dip twice for extra coating (or if you have some chocolate left over).Put the pops back into the freezer until chocolate is set.
