Chocolate Covered Pineapple Yogurt Clusters

I’ve got a super tasty and refreshing treat to share with you today: Pineapple Yogurt Clusters! They are very easy to make, packed with delicious flavors, and the perfect combination of creamy, fruity, and crunchy.
These little bites of heaven are perfect for satisfying your sweet tooth without feeling guilty.They taste like a piña colada cocktail, made with pineapple pieces surrounded in yogurt and shredded coconut and then coated in white or dark chocolate. They are the perfect ‘to die for’ no bake treat.
I got the idea for these after seeing the strawberry yogurt clusters going viral on TikTok. I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention.
This recipe is one of them, making a huge buzz around what is called frozen yogurt clusters, This is the same idea as the strawberry yogurt clusters, with the pineapple and chocolate complementing each other so nicely you have to give these a try.
I have tried a few of these viral TikTok recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this one is definitely a winner.
The white or dark chocolate adds the perfect amount of sweetness to these clusters so you don’t need to worry about adding any honey or additional sweetener to the yogurt.

When I made these for my family they could not get enough of them. The first tray of a dozen was gone in minutes and I was right back in the kitchen making more. The best part is I didn’t mind because these pineapple yogurt clusters are so easy to make.
Aside from the time it takes to freeze these treats they only take a few minutes of preparation and they can be enjoyed.
The coolest thing about these clusters is that you can mix and match any fruit with any chocolate. You can try the original idea and go for strawberries and dark chocolate or maybe try raspberries and milk chocolate or even blueberries and white chocolate.
The options are endless with these fruit clusters and I’m sure they are all just as delicious as the next. A healthy dessert option that your whole family will love!

Ingredients

  • 1 cup diced pineapple, fresh or canned
  • 1 cup Greek yogurt
  • 1/2 cup desiccated coconut
  • 2 tablespoons cashew (or any other nut) butter
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips, white, milk or dark
  • 1 tablespoon coconut oil

Instructions

  • Line a baking tray with parchment paper or use a silicon baking mat.
    Place pineapple in a medium mixing bowl along with the Greek yogurt, coconut, cashew butter and vanilla. Stir gently to combine using a spatula. 
    Using a tablespoon make 12 (or more smaller clusters) spoonful’s or clusters of the pineapple mixture onto the lined tray, ensuring it will fit in the freezer first.
    Leave a little gap in between each spoonful. Transfer to the freezer and leave for one hour or until frozen solid.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the clusters on the baking tray from the freezer. Working quickly, one by one add the clusters to the melted chocolate. Use two forks or a serving spoon to turn them around in the chocolate until fully coated.
    Lay each one back on the lined tray. If the chocolate should start to set from dropping the frozen yogurt clusters in it, gently warm it again.
    Add any toppings while the chocolate is still wet - keep an eye out as you go as the chocolate will harden quickly.
    Add your favourite toppings: coconut shreds, flaked salt, cinnamon, sprinkles or chopped nuts/seeds.
    When done, return to the freezer immediately. If you want to eat them right away, just freeze for 15 minutes, remove and serve.
    To have at another time you will need to take them out of the freezer about 30 minutes before you are ready to eat so they soften a little.
    Store in a resealable food bag or air-tight container in the freezer for up to 3 months.
