Chocolate Brownie Protein Bars

Chocolate Brownie Protein Bars that are healthy and SO delicious! A fudgy, protein-packed recipe using almond butter, chocolate protein powder, oat flour, and chocolate chips. So much better than store-bought!

Ingredients

  • 1/2 cup almond (or any other nut or seed) butter
  • 1/2 cup oat flour (oats blended to a flour)
  • 1/2 cup chocolate protein powder
  • 1/2 cup thick Greek-style yogurt
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips

Chocolate Drizzle

  • 1/4 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon baking pan.
    In a food processor, add the almond butter, oat flour, protein powder, honey, yogurt, coconut oil, cocoa powder and vanilla extract and mix until a thick dough forms.
    Press the mixture evenly into a lined pan. Sprinkle the mini chocolate chips on top and gently press into the dough. Place in the freezer for 15 minutes to firm up.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, remove bars from the freezer and lift out of the pan. Cut into 6 bars or more smaller squares. Drizzle melted chocolate over the top using a spoon. Return to the fridge or freezer for 15 minutes until chocolate drizzle is firm.
    Store in fridge for up to1 week or freezer for up to 3 months.
