Ingredients

Base Crust

  • 1/2 cup walnuts
  • 1/3 cup dates (about 5-6) soaked 30 minutes and drained

Avocado Filling

  • 1 medium avocado, peeled and pitted
  • 2 tablespoons chocolate chips, melted
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon vanilla extract

Toppings Optional

  • Dollop of whipped coconut cream – sugar free recipe below in notes
  • Shaved chocolate
  • Fresh fruit or berries

Instructions

Base Crust

  • Place walnuts and dates in a food processor and process until well combined.
    Press this nut-date mixture into the bottom of a dessert glass, ramekin, or mini tart pan to form the crust. No baking is required.
     

Avocado Filling

  • In a food processor or blender, place avocado, cocoa powder, honey, melted chocolate and vanilla extract and process until a smooth, mousse-like consistency is achieved.
    Taste test and add more cocoa, honey or vanilla extract if you think it needs it.
    Top the base crust with the chocolate avocado mousse, spreading it evenly.
    Garnish with whipped coconut cream (recipe below in notes) and fresh berries.
    Cover and refrigerate for at least an hour. Best when enjoyed within 24 hours.
