Chocolate Avocado Mousse
Ingredients
- 1/2 avocado, pitted, peeled and cubed
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/4 cup cocoa powder
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Toppings Optional
- Dollop of whipped coconut cream - recipe below in notes
- Fresh berries
- Shaved or grated chocolate and/or cocoa powder.
Instructions
- Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard. I give it to my dogs and they love it!Add all ingredients to a high speed blender or food processor.Blend for about 20 seconds, then stop and scrape sides of blender jug down if necessary.Process until mousse is smooth and lump-free.Spoon into two containers and you can enjoy immediately but I find it best if chilled in fridge for at least an hour. Decorate with fresh berries, whipped coconut cream (recipe below in notes), grated chocolate and/or cocoa powder.Storage - Store uneaten mousse in an airtight container in the fridge for 3-4 days. This mousse can be frozen.
