Chia Seed Pudding For Two

Chia seeds are nutritionally dense seeds that will thicken any liquid you add them to. Mix them up with plant-based (or dairy) milks and you have an almost instant pudding with a tapioca-like texture and gently sweet flavor.
This recipe is meant for breakfast and is the perfect make-ahead option for busy mornings!  But if you add a little more honey to the seeds as they swell, it will be sweet enough for dessert. It's creamy, delicious, filled with protein, fiber, and healthy fats.
Super healthy and indulgent enough to enjoy for a snack anytime too. You can use either black or white chia seeds, or a mix. The pudding will continue to thicken as its sits, so feel free to thin it out to taste with a little more milk before serving.

Ingredients

  • 5 tablespoons chia seeds
  • 1 cup milk or juice of your choice
  • 1-2 tablespoons honey or maple syrup
  • 1 1/2 teaspoons vanilla extract

Optional Toppings

  • Whipped coconut cream - store bought or recipe below in notes
  • Toasted coconut
  • Fresh fruit

Instructions

  • In a medium mixing bowl, combine the chia seeds, milk, honey and vanilla extract. Stir to combine. Cover and refrigerate for at least 4 hours, overnight is ideal.
    When ready to serve, portion into desired serving glasses or bowls, top with berries, whipped cream, and toasted coconut flakes.
