Cashew Cream Cheesecake

This Cashew Cream Cheesecake recipe is rich, creamy, sweet, tangy and even better than dairy, I think!
Dairy alternatives don’t always hit the mark, particularly when something cheesy is the goal. But cashew cheesecake is one of those decadent treats that many people proclaim is better than classic dairy cheesecake.
Here’s the thing: the cashews, coconut cream and lemon that make up the “cheese” part of the cheesecake has a texture to rival any old fashioned baked cheesecake.
And the base of the crust is made with almonds and dates, giving it a deliciously chewy and crunchy texture. Did I mention it’s also a no-bake dessert? It’s a no-bake dessert. Well, now you know.
Every time I try a new recipe, I take it to people who wouldn’t otherwise eat these types of “healthified” desserts, and see what their reaction is. There are no better candidates to do this than my family.
They literally roll their eyes at anything that is prefaced with any word resembling “vegan, gluten-free, raw, refined sugar-free, no bake, dairy-free” etc.. And honestly, they are probably not alone!
A lot of people think that when you take certain aspects away from a dish and add these labels, that it somehow strips the taste as well. But don’t believe this myth! It’s not true! Real food alternatives can be just as (if not more…in my humble opinion) tasty than the so-called“original.”
No-bake raw cashew cheesecake recipes tick all the ‘healthy’boxes, are easy to make and full of nutrition. They are all naturally free of gluten, dairy and refined sugar.
All are high in vitamins and minerals with no empty calories. They are also high in heart-healthy fats and fibre meaning it’s more difficult to overeat as a small slice satisfies even a sweet tooth. No one would guess that these are healthy cheesecakes as they taste so good.
The base for a no bake cheesecake is made from nuts, dates and coconut. But just about any nut or seed or dried fruit that you have in your store cupboard can be used for the base.
And this is a favorite version. It has a remarkably rich consistency, perfectly sweet and tangy flavor, and all the indulgence you could hope for. You could take this to a pot luck dinner and people will be asking you for the recipe.
It delivers the classic after-dinner treat you are looking for but in a satisfying yet nutrition-packed treat.

Ingredients

Base Crust

  • 1 cup almonds, or walnuts or a mix
  • 1 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 1/2 cup dates, soaked at least 30 minutes and drained 

Cashew Filling

  • 2 cups cashews, soaked 3+ hours and drained
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1-2 lemons, juice and zest (depending on how lemon-ey you like it)

Toppings

  • Whipped coconut cream, store bought or recipe below in notes
  • Fresh sliced strawberries (or berry or fruit of choice)
