I first started eating chia seed puddings around six years ago when I wanted to begin eating a little cleaner in the morning for breakfast and also not reach for the naughty snacks when I got a bit peckish.

Chia seed puddings seemed like the perfect alternative. Super easy to make, a lot of room for creativity and combination of flavours, and most importantly, satisfying.

I have a few different variations on rotation, but I can’t get past the cashew cream with this one. It’s not too sweet and works beautifully with the chia seed pudding.

It’s great to make in advance in little glass jars and just pop it in your bag if you are running late for school drop-off, work, or study.

This little pudding is naturally sweet and creamy with a little crunch from the chia seeds. Using homemade cashew milk, you get the full nutrient profile of the cashews because you are using the whole nut and not straining out the nutrient-rich solids. Its a nutrient-dense dish full of fiber, protein, Omega-3s, and minerals.

Dates add natural sweetness. This cute little pudding cup can be an easy breakfast, light dessert or a “hold you over between meal” snack. Quick note: You will want to plan ahead because you need to soak your chia seeds in the cashew milk overnight.

Chia seed puddings are best made in advance as the chia seeds expand with time. This is why I always use lots of liquid, as they actually absorb 10 to 12 times their own weight.

They form a gel and are great for cooking and baking. I sometimes mix them into my porridge, add them to my smoothie, or grind them up to use as a binder in cakes, slices, or veggie patties.

Another great thing about this recipe is that it can be used as a base and modified by adding your favorite fruits and/ or nuts. It’s so rich, creamy, and decadent, that I’ve even served it as a dessert. I just drizzled a little melted chocolate on top and voila!

Cashew Chia Pudding With Coconut Cream

Ingredients

  • 1/2 cup cashews, soaked 3+ hours and drained
  • 1 1/2 cups cups water
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/4 cup chia seeds
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Toppings Optional

  • Dollop of coconut cream –store bought or homemade sugar free recipe link below in notes
  • Chopped dark chocolate
  • Chopped bananas
  • Cinnamon

Instructions

  • Add cashews to the blender along with the water, dates, coconut oil and vanilla extract. Blend until completely smooth (2-3 minutes).
    Pour the cashew mixture into a jar or mixing bowl and add chia seeds. Mix well and give the mixture a stir a few more times or give the jar a shake to avoid the chia seeds clumping.
    Refrigerate for several hours or overnight to allow the mixture to thicken.
    Spoon into bowls and top with a dollop of the coconut cream, chocolate chunks, bananas and a sprinkle of cinnamon.
