This viral TikTok snack hack is just too good not to share…with a few date-able additions.  If you have no idea what I am referring to or need a refresher, basically a rice cake gets a healthy spread of nut butter covered in melted chocolate and a sprinkle of flaky sea salt. And VOLIA! A healthy and delicious dessert or snack.

To make it even easier, you most likely already have all of these ingredients lying around in the pantry when your sweet tooth hits! For a no bake, no fuss, no fail treat, my take on this creation is simple ingredients: rice cake, nut butter, soft dates, dark chocolate and flaky sea salt!

I have to admit rice cakes kinda fell off my radar, but now they are going to become a regular treat with this recipe. When paired with dates, it adds an additional caramel layer with an extra nutritional boost. Dates add fiber, potassium, vitamin B and more, in this delicious refined sugar-free treat!

Ah, the humble rice cake – often overlooked and underestimated. While not a standalone nutritional superstar, being essentially puffed rice pressed together, the right toppings can transform it in a far more satisfying (and exciting!) snack.

Here, and with a little strategic pairing, they can become a satisfying and balanced snack – leaving their reputation as a bland diet food relic far behind.

I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention. One of them that is making a huge buzz is around what is called “putting things on rice cakes”.

So, how do you turn a rice cake into a decadent and delicious snack? Easy! Create decadent toppings like this recipe and dress these bad boys up!

Cashew Butter, Date & Chocolate Rice Cakes

Try the TikTok viral chocolate rice cakes at home - a crunchy, delicious snack made with only 6 ingredients. This treat is like a better-for-you candy bar made with ingredients that you probably already have for an irresistible and satisfying snack.

Ingredients

  • 1 rice cake
  • 2 soft dates
  • 1-2 tablespoons cashew (or any nut) butter
  • 1/4 cup chocolate chips
  • 1 teaspoon coconut oil
  • Optional: flaky sea salt

Instructions

  • Spread cashew butter evenly over rice cake. Then cut each date in half. Gently flatten each half and place on top of rice cake.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, spoon chocolate over the top of the rice cake.
    Sprinkle sea salt over chocolate covered rice cake then place in freezer for 8-12 minutes until chocolate has hardened before devouring!
