Cashew Butter, Date & Chocolate Rice Cakes
Ingredients
- 1 rice cake
- 2 soft dates
- 1-2 tablespoons cashew (or any nut) butter
- 1/4 cup chocolate chips
- 1 teaspoon coconut oil
- Optional: flaky sea salt
Instructions
- Spread cashew butter evenly over rice cake. Then cut each date in half. Gently flatten each half and place on top of rice cake.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, spoon chocolate over the top of the rice cake.Sprinkle sea salt over chocolate covered rice cake then place in freezer for 8-12 minutes until chocolate has hardened before devouring!
