Carrot Fudge Balls

Packed with flavour, these freezer friendly Carrot Fudge Balls are a wonderful lunchbox addition or grab and go snack. You’ll love the flavours of this simple recipe. It’s a wholesome blend of carrots, nuts, dates, coconut and has delicious flavours of cinnamon and ginger. This no bake recipe comes together in no time in a food processor.  A perfect fibre fuelled, added vegetable snack for school lunches or as a delicious addition to anyone’s snack box.

Ingredients

1 cup cashews

1 cup walnuts

1 cup dates, soaked at least 30 minutes and drained

1 cup grated carrots

½ cup shredded coconut + extra ¼ cup for rolling balls in

1 teaspoon cinnamon

½ teaspoon ground ginger

½ teaspoon all spice

1/3 cup raisins

Instructions

Place cashews and walnuts into a food processor and process until broken down. Add dates, coconut, spices, and ½ cup of grated carrots. Blend again until the mixture forms a sticky dough. If the dough is still a bit wet and not forming, add more coconut, 1 tablespoon at a time.

Fold in raisins and the rest of the shredded carrots, pulse a few times.

Roll into balls. (Wet your hands before rolling to prevent sticking).

Coat with shredded coconut. Store in the freezer.
