Carrot Cake Smoothie Bowl
Carrot cake for breakfast, anyone? I’ve infused this bowl with all the delicious flavor you would expect from an indulgent carrot cake – but in a frosty, layered deliciously refreshing smoothie bowl. No added sugars or artificial ingredients in this bowl, and 100%plant based! It’s a luscious creamy breakfast that tastes like dessert but it’s packed with nutrients, protein and healthy fats. A delicious way to add vegetables into your breakfastAfter all, who doesn't love carrot cake?! Well I for one definitely do and always have. It's been years since I've eaten a standard slice of baked carrot cake so I wanted to create a healthy breakfast bowl recipe that could mimic some of the traditional flavors of carrot cake without all the added unhealthy ingredients. Seeing as carrot cake is one of my all time favorite flavors and I do love smoothie bowls it made good sense to combine the two and I simply had to make a Carrot Cake Smoothie bowl. I love this smoothie bowl because it tastes like a frozen treat, but is packed with fruits and veggies.Carrots are definitely under-utilized in smoothies. They are naturally sweet, and meld perfectly with most fruit flavors, like orange, pineapple, and banana.This fabulous smoothie bowl is perfect to rejuvenate after a taxing workout or activity any time of year. Its creamy,fruity and yummy.It’s also a fun, healthy recipe for kids to assemble and enjoy, and from experience children give it their tick of approval. Perfect way to get hidden vegies into the little ones.

Ingredients
- 1 banana, sliced, frozen
- 1/2 cup carrots, sliced thinly
- 1/2 cup milk of choice
- 1 orange, peeled
- 2 dates
- 1 tablespoon nut butter
- 1 tablespoon chia seeds
- 1/2 teaspoon ground cinnamon
Toppings – Optional
- Dollop of whipped coconut cream – recipe below in notes
- 1 tablespoon walnuts or almonds, chopped
- Sliced fresh banana
- Toasted shredded coconut
- Hemp seeds
Instructions
- Using a vegetable peeler, remove the outside of the carrot and discard.Peel the rest of the carrot using the vegetable peeler. This cuts the carrots into thin ribbons and helps the carrot blend in the smoothie better.Place all ingredients in a blender and blend until smooth. Place the smoothie in a bowl and top with toppings.
