Ingredients

  • 1 cup condensed milk – store bought or sugar-free recipe below in notes
  • 1 1/2 cups blueberries, fresh or frozen, unthawed
  • 1-2 tablespoons honey or maple syrup
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  • If you are making your own homemade sugar-free condensed coconut milk,make it first and let it cool before making the nice cream (recipe link below in notes).
    Mash the berries, leaving a few larger chunks. Mix the berries with the coconut condensed milk, honey, vanilla extract and lemon juice. Taste test and add more honey or lemon juice if you think it needs it.
    Pour mixture into a glass dish, silicon or popsicle molds if you want to shape your frozen treat.
    Freeze: Place the container in the freezer and let the ice cream freeze until it reaches your desired consistency. It’s a good idea to give it a gentle stir after the first hour of freezing to ensure an even texture.
    Serving: When you are ready to serve the ice cream, simply remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly. Then scoop and enjoy!
