If you haven’t already heard about it, I would like to introduce you to Nice Cream, a yummy ice cream made with a frozen fruit base and other add-ins! Its my favorite healthy ice cream because it’s quick and easy to prepare, with only three ingredients required.

You simply blitz pieces of frozen fruit in a food processor and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion (birthday party, anyone?) yet light and easy enough for an any time indulgence.

You don’t need one of those special ice cream churning machines, you simply use frozen banana, some coconut cream, a splash of milk and some flavourings – that’s it!

It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.

This naturally dyed blue ice cream is the most scoopable, silky smooth, no icy, soft ice-cream you will ever try. Blue Spirulina powder has been added to give a pretty vibrant blue effect.

Blue Spirulina is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina, a well-known antioxidant superfood.

It is freeze dried to preserve its natural colour and nutrients. You can get creative and add this beautiful nature product to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures!

You can add blue spirulina to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods. For light blue shades, use just a pinch and for a more brilliant blue, use up to the full teaspoon.

Blue Spirulina is known to have high nutritional value and boosts the immune system, increases metabolism and improves digestion! Contains an abundance of B vitamins which can enhance energy levels too. In this recipe its been added to nice cream for a stunning blue effect.

Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy!

This luscious recipe is a wonderful healthy ice cream alternative. And it takes just minutes to whip up this easy healthy dessert in a food processor if you freeze the fruit ahead.

Ingredients

  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 cup cashews, soaked 3+hours and drained
  • 1 banana, sliced, frozen
  • 1/4 cup honey or maple syrup
  • 1 teaspoon blue spirulina powder
  • 1 teaspoon vanilla extract

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this recipe to allow coconut cream to separate.
    When you are ready to go ahead and make the nice cream, open the chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place all nice cream ingredients - hardened coconut cream, cashews, banana, honey, blue spirulina powder and vanilla extract into the food processor and process until smooth and creamy.
    Depending on the power of your blender this might take a few minutes. Stop blending to scrape the sides and continue to blend until very smooth. Taste test add more honey or vanilla if you think it needs it.
    You can eat the nice cream straight out of the blender if you like the soft-serve texture. For a firmer texture, spoon the mixture into a dish and set it in the freezer for about 30 minutes until it firms up. Then just scoop, serve, and enjoy!
    Serve straight away or freeze for later. If frozen, allow to thaw for 20 minutes to let it soften before scooping.
    Scoop and enjoy on its own or top your smoothie bowls or serve in a cone.
