Blue Mermaid Nice Cream

This luscious recipe is a wonderful healthy ice cream alternative. And it takes just minutes to whip up this easy healthy dessert in a food processor if you freeze the fruit ahead.

Ingredients

  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 cup cashews, soaked 3+hours and drained
  • 1 banana, sliced, frozen
  • 1/4 cup honey or maple syrup
  • 1 teaspoon blue spirulina powder
  • 1 teaspoon vanilla extract

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this recipe to allow coconut cream to separate.
    When you are ready to go ahead and make the nice cream, open the chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place all nice cream ingredients - hardened coconut cream, cashews, banana, honey, blue spirulina powder and vanilla extract into the food processor and process until smooth and creamy.
    Depending on the power of your blender this might take a few minutes. Stop blending to scrape the sides and continue to blend until very smooth. Taste test add more honey or vanilla if you think it needs it.
    You can eat the nice cream straight out of the blender if you like the soft-serve texture. For a firmer texture, spoon the mixture into a dish and set it in the freezer for about 30 minutes until it firms up. Then just scoop, serve, and enjoy!
    Serve straight away or freeze for later. If frozen, allow to thaw for 20 minutes to let it soften before scooping.
    Scoop and enjoy on its own or top your smoothie bowls or serve in a cone.
