Blue Dream Spirulina Balls

These naturally dyed blue, healthy coconut snack bars are perfect if you want something sweet and satisfying. Super easy to make, full of flavor and way healthier than store-bought.
These snack bars look and taste delicious, are full of healthy ingredients and will give you a boost of energy and satisfy sweet cravings in an instant. Full of fibre, minerals and vitamins and a great way of incorporating more good stuff into your diet.
Another benefit is that they only need 10 minutes prep time and can be easily prepared in advance – stored in an airtight container in the fridge they will stay fresh for two weeks. Whenever you need a quick energy boost, they are the ideal ‘grab and go‘ snack.
Now lets look at the blue colour.
Blue Spirulina powder has been added to give a pretty vibrant blue effect.
Blue Spirulina, a well-known antioxidant superfood, is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina (blue-green algae).
It is rich in protein, vitamins, minerals, iron, carotenoids and antioxidants which all help to protect cells from damage. It is freeze dried to preserve its natural colour and nutrients.
You can get creative and add this beautiful nature product to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures!
You can add this superfood to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods. For light blue shades, use just a pinch and for a more brilliant blue, use up to the full teaspoon.
Its known to have high nutritional value and boost the immune system, increase metabolism and improve digestion! Contains an abundance of B vitamins which can enhance energy levels.

Ingredients

  • 1 cup coconut condensed milk – store bought or sugar free recipe below in notes
  • 3 cups desiccated coconut
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1-2 teaspoons blue spirulina powder (start with 1 teaspoon and add more if a more vibrant blue is desired)

Chocolate Coating

  • 1 cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

  • Firstly, if you are making your own sugar free condensed coconut milk do that first. Recipe link below in notes.
    Use silicone bar molds or line a loaf pan with parchment paper, taking it over the top and sides to act as a handle so removing the bars is easy.
    In a bowl mix the condensed milk, coconut, honey and vanilla extract until well combined. Taste test and add more honey if you think it needs it.
    Press into the loaf pan or silicon pan and spread out evenly with a spatula or back of a spoon. Place in freezer while you make the chocolate coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts, stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bars and after checking they are firm and set, remove from pan using the parchment paper handles and cut into 10-12 bars or pop out of molds.
    Skewer each bar, or use 2 forks to hold each bar or use a fork placed underneath, dip every bar into the melted chocolate then place on a rack to dry. Dip twice for extra coating if preferred.
    Put the bars into the freezer for at least 3 hours.
    Once chocolate is set and crisp, enjoy your homemade Blue Dream Coconut bars.
    They will keep in the fridge for up to 2 weeks or in the freezer for up to 3 months.
