Bircher Muesli For One

Bircher muesli is the perfect no cook solution for a nourishing, hearty and nutritious breakfast on the fly. Prepare the night before, and you will be all set for the morning. Just add your toppings and go! A fantastic breakfast to bring to work or school.
Not only is Bircher muesli delicious but it kickstarts your day on the right note, providing a healthy breakfast that you can feel good about and that will keep you full until lunchtime.
This Bircher recipe uses simple, all natural ingredients including oats, fruits, nuts and creamy yoghurt. Oats are incredibly healthy and a great source of many important vitamins and minerals as well as fibre which, along with the healthy fats in the yoghurt, helps to make this a filling and nutritious breakfast.
You can add as many fillings or toppings as you like, or eat it by itself for a simple pre-made breakfast.

Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup Greek style yogurt
  • 1/2 cup milk of choice
  • 1 apple, diced
  • 1/2 banana sliced
  • 1 tablespoon dried cranberries
  • 1 tablespoon walnuts, chopped
  • 1 tablespoon pumpkin seeds

Toppings

  • Fruit, nut butter, nuts, seeds, cinnamon,

Instructions

  • Place all ingredients in a small bowl, and mix to combine. Cover and place in the fridge overnight.
    In the morning, stir and top with your desired fruit, nuts, honey, seeds or nut butter. Drizzle on a little extra milk if you wish for a great breakfast on the go! Garnish with additional cranberries or pumpkin seeds before serving.
