Berry-Cashew Frozen Protein Tarts

I have recently seen these viral frozen creations on social media, many with just 3 ingredients, and knew I needed to make my own version. While my recipe requires more than just 3 ingredients, these delightful little tarts are packed with protein and taste incredible! They have been my go-to dessert for weeks.

These frozen berry tarts are the ultimate sweet treat, they taste like mini ice cream cakes, but are super healthy and don’t require any cooking (<— the best part!).

We start with the base layer which is a nut-based crust made from dates and pecans. This is a common theme in many no-bake desserts and for good reason. These nut crusts are tender and sweet, with just a little crunch and pair perfectly with the creamy texture of creamy custards and cheesecakes.

I love the combination of dates and pecans because I find that they both have mild caramel undertones, so I think they truly complement each other. But if you are not into pecans, no problem, you could easily substitute your favorite nut(s) to use instead.

The next layer we get to with these berry tarts is the filling. Like most no-bake custards/cheesecakes, we are using cashews in the filling with coconut butter. It ends up being incredibly creamy with a simple coconut vanilla flavor.

If you are a coconut lover, then this dessert will be perfect for you.

I topped the mini tarts with sliced strawberries and fresh blueberries, but you could use any fruit that you have on hand. Stewed peaches, cherries, raspberries, and so on, would all be awesome.

Berry-Cashew Frozen Protein Tarts

These frozen berry tarts are an easy, no-bake dessert or treat. With a sweet, nutty crust and a creamy coconut filling, everyone will love them!

Ingredients

Base Crust

  • 1 cup pecans or nuts of choice 
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/2 cup rolled oats

Cashew Protein Filling

  • 1 cup cashews, soaked 3+hours and drained
  • 1/2 cup coconut butter, store bought or recipe below in notes
  • 1/4 cup water
  • 2 scoops protein or collagen powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Berries or fruit of choice for topping

Instructions

Base Crust

  • Line a 12-hole muffin pan with paper liners or use a silicon muffin pan.
    Place the pecans and dates and pecans into a food processor and process until crumbly and the mixture starts to form a dough and stick together.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your base crust.
    Scoop 2 tablespoons of dough into the bottom of the each muffin cup and spread out evenly with the back of a spoon. Refrigerate the crusts for 30 minutes.

Cashew Protein Filling

  • Place cashews, honey, coconut butter, water and vanilla into the food processor and process adding a little more water as needed to get a smooth and creamy consistency and to thin it out. You want it to be a little thicker than sour cream.
    Remove the crusts from the freezer. Spoon about 2 tablespoons of the filling on each crust. Top each tart with berries or fruit of choice.
    Return to the freezer for at least one hour, but preferably a little longer.
    Let sit at room temperature for just a few minutes before serving.
    Store in freezer for up to 3 months.
