These frozen berry tarts are an easy, no-bake dessert or treat. With a sweet, nutty crust and a creamy coconut filling, everyone will love them!

Ingredients
Base Crust
1cuppecans or nuts of choice
1cupdates, soaked 30 minutes and drained
1/2cupdesiccated coconut
1/2cuprolled oats
Cashew Protein Filling
1cupcashews, soaked 3+hours and drained
1/2cupcoconut butter, store bought or recipe below in notes
1/4cupwater
2scoopsprotein or collagen powder
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Berries or fruit of choice for topping
Instructions
Base Crust
Line a 12-hole muffin pan with paper liners or use a silicon muffin pan.Place the pecans and dates and pecans into a food processor and process until crumbly and the mixture starts to form a dough and stick together. Be careful not to over process as its nice to have texture variance and different sized “bits” in your base crust.Scoop 2 tablespoons of dough into the bottom of the each muffin cup and spread out evenly with the back of a spoon. Refrigerate the crusts for 30 minutes.
Cashew Protein Filling
Place cashews, honey, coconut butter, water and vanilla into the food processor and process adding a little more water as needed to get a smooth and creamy consistency and to thin it out. You want it to be a little thicker than sour cream.Remove the crusts from the freezer. Spoon about 2 tablespoons of the filling on each crust. Top each tart with berries or fruit of choice. Return to the freezer for at least one hour, but preferably a little longer.Let sit at room temperature for just a few minutes before serving.Store in freezer for up to 3 months.
