Banana Walnut Freezer Fudge

This outrageously delicious, good-for-you fudge is a healthy option you can make to satisfy your sweet tooth or when you just need a 'little something'.
This banana fudge might just be one of my favorite recipes ever! It is so, so full of flavour and has a beautiful creamy texture that will leave you wanting more, and it’s ok to indulge as its healthy and good for you. It's only got six ingredients, all of which you can pronounce. That's gotta be a good thing, right?
I keep these in the freezer, and they make for the perfect sweet treat to have on hand as we all need to have treats like this stashed away in our freezers.
This easy, banana fudge is a rich and creamy treat that's ready in minutes and overflowing with classic banana flavor.

Ingredients

  • 2 large bananas
  • 1 cup walnuts or almonds or a mix
  • 1/2 cup cashew (or any other nut or seed) butter
  • 1/2 cup coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  •  First prepare your pan or dish
    Use a silicon bar or snack mold, a mini muffin tin or line a loaf tin with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place walnuts in a food processor and process until broken down and crumbly.
    Add bananas, cashew butter, coconut oil, honey and vanilla extra and continue to process until well combined.
    Scoop mixture into your silicon molds or lined loaf pan and place in freezer for an hour or so to firm up.
    Take out of freezer, remove mixture from pan and cut into squares or cubes or pop out of silicon mold.
    Keep in the fridge or freezer to remain firm as they soften easily and quickly at room temperature. If kept in the freezer, simply take them out 5-10 minutes before serving.
    They should last for several weeks if not more in fridge and 3 months in freezer.
