Banana Brownie Parfait

Creating your own gorgeous food from scratch is the perfect way to stay on track with your healthy eating plans as you have control over exactly what goes into your food and therefore have control exactly over how you look and feel.Anyways… those who know, know that bananas and chocolate are a match made in dessert heaven. This recipe has both, and so much more. The decadent brownie crumble base is the perfect stage for the smooth chocolate cream filling to really shine. Ingredients
Brownie Crumble
- 1 cup almonds or walnuts
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup desiccated coconut
- 1/2 cup oats, instant or quick
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Chocolate Cream Filling
- 1 cup mashed banana
- 1 cup cashews, soaked 3+hours and drained
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/4 cup honey or maple syrup
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
For Assembly
- 2-3 bananas, sliced
Instructions
- Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
Brownie Crumble
- Combine all ingredients in a food processor and process until broken down and crumbly. Be careful not to over process as its nice to have texture variance and different sized ‘bits’ in the brownie crumble.
Chocolate Cream Filling
- Open chilled coconut cream can and scoop out the cream that has separated and set hard on the top and place in food processor. Save the remaining coconut water to use in a smoothie, drink, or discard.Place all other filling ingredients - mashed banana, cashews, honey, cocoa powder and vanilla together with the coconut cream in the food processor and process until completely smooth. Scoop the mixture out into a bowl and chill in the fridge for at least 2 hours.To assemble: Take 4-6 jars or parfait glasses (depending on how big you want your portion size) and arrange some of the diced bananas in each one. Spoon a layer of chocolate cream filling on top and sprinkle some brownie mixture over it. Repeat the layers one or two more times. Serve immediately.
