Ingredients

  • 2 medium ripe avocados, peeled and deseeded
  • 1 medium ripe banana
  • 1 cup chocolate chips or chunks
  • 1/2 cup desiccated coconut
  • 1/2 cup vanilla protein powder (optional)
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Peel the banana and add to a food processor along with the avocado flesh, desiccated coconut, coconut oil and honey. Blitz the ingredients together until a smooth glossy mixture forms.
Stir through the chocolate pieces ensuring they are evenly distributed throughout the mixture
Pour the mixture into a lined baking tin, ensuring the mixture reaches into all four corners and is smooth on top
Place in the freezer to set for a minimum of two hours before slicing into 12 bars or more squares depending on the size you prefer.
You can keep the protein bars out at room temperature for 1-2 days but for maximum freshness and best texture, it's best to store these protein bars covered in the fridge. They will be fresh for up to 5-7 days.
These protein bars also freeze very well! Seal them inside an airtight container or Ziploc bag for up to 4 months.
