Avocado Mint Protein Nice Cream

This creamy, avocado nice cream recipe will have all the mint chocolate chip lovers swooning! Made with only seven ingredients and doesn't require an ice cream maker! Get ready for a delish ice cream that's actually healthy!

Ingredients

  • 4 medium bananas, cut into slices and frozen
  • 2 medium ripe avocados
  • 1/2 cup almond (or any) milk
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon peppermint extract
  • 1/2 cup mini chocolate chips
  • For a more vibrant green colour add a few drops natural green food colour or make your own – cook tender,greens (such as spinach) in a tiny bit of water for about a minute. A few drops of the juice will give a very concentrated green.

Instructions

  • Add the frozen bananas to your food processor. Cut the avocados in half lengthwise, remove the pit, scoop out the flesh, and place in the food processor.
    Add ¼ - ½ cup of almond milk. I recommend starting with ¼ cup and adding an additional ¼ cup if the mixture needs more liquid to blend evenly. Place the top on the food processor and blend for 1 minute or so. Add protein powder, honey, peppermint extract and continue blending until completely combined and smooth and creamy.
    If needed, stop the food processor and scrape the sides with a spatula to help incorporate all of the ingredients, then continue blending.
    Taste the nice cream. If it needs more sweetness add more honey or if you want more mint flavour add more peppermint extract.
    Lastly add the mini chocolate chips and pulse a few times to incorporate.
    Transfer the mixture to a 9 x 5-inch loaf pan. Sprinkle the top with the remaining mini chocolate chips. Enjoy immediately for a soft-serve consistency, or transfer to the freezer for1 hour, for a firmer ice cream consistency.
