Avocado Lime Parfait

This Avocado Lime Parfait recipe is a decadent way to make a vibrant emerald treat using ripe avocados as the puree, lime juice for zing (and to retain the avocados bright green color) and a crunchy crumble topping made from almonds, sweet dates and coconut.
Not only is this dessert free of gluten, dairy and refined sugars, it’s also a no-bake recipe which makes it especially appealing.These avocado lime parfaits will blow you away with how easy they are to make and how delicious they taste! They are made with simple ingredients, and tart and creamy just like lime cheesecake pie!
You can feel good about enjoying these because they are made with wholesome ingredients. The “crust” is raw, made of a blend of almonds, dates and shredded coconut to tie it all together. These parfaits take no time at all to whip up in a food processor and if I didn’t tell you they were made with avocado you wouldn’t know it!
Avocado lime parfaits are the perfect dessert or snack. My favorite way to eat it as a snack is to add some berries to it along with a drizzle of nut butter on top!
I hear you asking, can you taste the avocado?
Not really! To be honest, the avocado takes on the taste of the lime juice that you squeeze into the filling mixture. The avocado contributes to the texture of these parfaits and gives more healthy fat, fiber and vitamin E and potassium!
This layered lime avocado parfait is a perfect way to start your day. It is indulgent, flavorful and nutritious and will elevate your morning routine as a healthy breakfast.
My family love this as a breakfast parfait as much as I do, and it is a great way to sneak avocado into their diets so they can benefit from the potassium, fiber and healthy fats avocado has to offer.

Ingredients

Base Crust

  • 1/2 cup almonds
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut

Avocado Lime Layer

  • 1 medium avocado, destoned, peeled
  • 1 cup vanilla or plain Greek yogurt
  • 2 limes, juice and zest
  • 2 tablespoons honey or maple syrup

Toppings

  • Whipped Coconut Cream – recipe below in notes
  • Chopped nuts
  • Yogurt
  • Shredded coconut
  • Drizzle nut butter

Instructions

Base Crust

  • Add almonds, dates and coconut to a food processor and process until broken down, crumbly and well combined. Spoon almond, date mixture into the bottom of 2 parfait glasses or jars. Set aside

Avocado Lime Layer

  • Combine avocados, yogurt, honey. lime juice and zest in the bowl of a food processor. Pulse until smooth and well combined.
    Scoop mixture on top of crust so that about 3/4 of the parfait glass is filled.
    Dollop a spoonful of whipped coconut cream (recipe below in notes) or more yoghurt on top of the avocado lime mixture. Grate extra lime zest on top to serve.
    Store jars in the fridge covered for up to 4 days. The lime will prevent the avocado from browning!
