Ingredients
- 2 cups dried apricots
- 2 cups desiccated coconut
- 1 cup macadamia nuts
- 2/3 cup condensed milk – store bought or homemade sugar free recipe below in notes
Coating
- 1 cup shredded coconut or powdered sweetener, stevia or monk fruit
Instructions
- If you are going to be making your own sugar free condensed coconut milk, make it first so it is ready when you go to make these bliss balls.Put the apricots and macadamia nuts into a food processor and process until broken down and crumbly. Add coconut and condensed milk and pulse a few times until combined.Be careful not to over process as its nice to have texture variance and different sized “bits” in your bliss balls.Scoop scant 1 tablespoon (I used a small cookie scoop) and roll the mixture into a ball. Makes 12-15 balls depending on your preferred size. Roll in shredded coconut or powdered sweetener, stevia or monk fruit. These balls will keep in the fridge for one week and the freezer for up to three months.
Notes
There are some recipes that are just better with condensed milk (think fudge and ice cream!)
