Almond Apricot Fudge

Fudge, but not as you know it – this 5 ingredient almond fudge is made with healthier ingredients and there’s no cooking required!
This popular no-bake slice just oozes old-school style. It's easy to make and even easier to eat! It makes a healthy and tasty snack and or treat that is perfect for lunchboxes.
This easy no bake healthy fudge is a nutritional powerhouse, full of healthy fats and fibre. It will keep in the fridge for up to 2 weeks.

Ingredients

  • 1 cup almonds
  • 1 cup apricots, dried, soaked for 5 minutes and drained
  • 1 cup dates, soaked at least 30 minutes and drained
  • 1/4 cup cocoa or cacao powder
  • 1/4 cup coconut oil, melted

Topping

  • 1/4 cup apricots, dried chopped
  • 1 tablespoon cacao nibs or chocolate chips

Instructions

  • Line the base and sides of an 8x 4 -in loaf pan allowing the edges to overhang.
     Place the almonds in a food processor and process until broken down and crumbly. Add dates and apricots and continue to process until well combined but still a bit chunky for texture.
    Add cocoa powder,coconut oil and pulse a few times to combine.
    Press into the prepared pan and smooth the surface.
    Sprinkle the cacao nibs and reserved chopped apricots on top and gently press down into the fudge. Place in the fridge for 4 hours or until firm.
    Use a sharp knife to cut into 18 pieces.
    Store any leftover fudge in an airtight container in the fridge.
