Raspberry Coconut Protein Fudge

Raspberry Coconut Protein Fudge

If you are a fan of rich, creamy fudge but want something that is made with wholesome ingredients and actually nourishes your body, this Raspberry Coconut Protein Fudge is about to become your new favourite treat. Silky smooth, naturally sweet, bursting with raspberry flavour, and packed with protein, it is the perfect balance of indulgence and nutrition.

At Blended Bites, we believe healthy treats should taste every bit as delicious as traditional desserts. There is no need to choose between enjoying something sweet and eating well. This recipe proves that simple, real-food ingredients can create a dessert that is rich, satisfying, and full of goodness.

The secret to this creamy fudge is coconut butter. Unlike coconut oil, coconut butter is made from the whole coconut flesh, giving it a naturally creamy texture and delicate coconut flavour. It creates a melt-in-your-mouth consistency that is remarkably similar to classic fudge while adding fibre and healthy fats. The result is a smooth, luxurious bite that feels incredibly indulgent.

Fresh or frozen raspberries bring vibrant colour, natural sweetness, and just the right amount of tanginess. Their bright flavour perfectly balances the richness of the coconut butter, creating a combination that is refreshing, fruity, and impossible to resist. Raspberries are also packed with vitamin C, fibre, and antioxidants, making every bite as nourishing as it is delicious.

What makes this fudge even more satisfying is the addition of protein powder. A good-quality vanilla protein powder blends beautifully into the mixture, adding creaminess while boosting the protein content. Protein helps keep you feeling fuller for longer, supports muscle recovery, and turns this sweet treat into a snack you can genuinely feel good about enjoying.

Naturally sweetened with a little maple syrup or honey, this fudge lets the fresh raspberry flavour shine without becoming overly sweet. A splash of vanilla rounds out the flavours, while a pinch of sea salt enhances both the coconut and berries, creating a perfectly balanced bite every time.

One of the things you will love most about this recipe is just how easy it is. Everything comes together in a blender or food processor before being poured into a lined pan to chill. There is no baking, no candy thermometer, and no complicated steps. Simply blend, chill, slice, and enjoy.

The texture is wonderfully creamy straight from the fridge, almost like a cross between cheesecake and traditional fudge. If you prefer a firmer bite, simply keep it in the freezer for a few minutes before serving. Either way, each square delivers rich coconut flavour with bursts of raspberry in every mouthful.

These little fudge squares are ideal for meal prep because they store beautifully. Keep them in the refrigerator for a quick afternoon snack, a healthy dessert after dinner, or a post-workout bite when you are craving something sweet. They are also perfect for sharing at parties, taking to picnics, or wrapping up as a thoughtful homemade gift.

For an extra touch of indulgence, drizzle the finished fudge with melted dark or white chocolate, or sprinkle the top with freeze-dried raspberries and shredded coconut. The contrast of colours makes these little squares look as beautiful as they taste.

If you are looking for a healthy treat that’s creamy, fruity, protein-rich and incredibly simple to make, this Raspberry Coconut Protein Fudge deserves a place in your recipe collection. It is proof that wholesome ingredients can create something every bit as decadent as traditional fudge while leaving you feeling energised instead of weighed down.

One bite, and you will understand why this easy no-bake recipe is destined to become a regular in your fridge. ✨

I love using coconut butter in no bake recipes. It’s a rich, creamy spread made by pureeing the entire flesh of a coconut. Because it preserves the whole coconut fruit, it offers complete whole-food nutrition.

Ingredients

  • 1 cup coconut butter, softened, store bought or homemade recipe below in notes
  • 1 cup freeze-dried raspberries or ¾ cup fresh raspberries*
  • 2 scoops vanilla protein powder
  • 2-3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons coconut milk (if needed)
  • Pinch of sea salt

Optional Toppings

  • Melted dark chocolate or white chocolate drizzle
  • Freeze-dried raspberry pieces
  • Shredded coconut

Instructions

  • Note: Fresh raspberries
*If using fresh raspberries, blot away excess moisture with paper towels before blending for the firmest fudge.
Line an 8 x 8-inch square pan or loaf tin with parchment paper.
If your coconut butter is solid, place the jar in hot water for a few minutes or give it a couple of bursts in the microwave.
Add the coconut butter, raspberries, protein powder, maple syrup, vanilla, and sea salt to a food processor or high-speed blender.
Blend until completely smooth and creamy. If the mixture is too thick, add the coconut milk one tablespoon at a time until smooth but still thick.
Spread the mixture evenly into the prepared pan and smooth the surface with a spatula.
Sprinkle with freeze-dried raspberries or shredded coconut if desired.
Refrigerate for 2–3 hours, or freeze for about 1 hour until firm.
Lift the fudge from the pan using the parchment paper and cut into 20 (more or less) small squares.
If desired, drizzle with melted dark or white chocolate before serving.
    Tips & Variations
For an extra burst of raspberry flavour, stir through a handful of chopped freeze-dried raspberries before chilling.
Chocolate protein powder creates a delicious chocolate-raspberry version.
Top with chopped pistachios or almonds for a little crunch.
For a cheesecake-inspired twist, add 2 tablespoons of softened cream cheese to the mixture before blending.
Store in an airtight container for up to 1 week or freezer for up to 2 months. Allow to sit at room temperature for 5 minutes before serving.
