Swirl it into yogurt. Add a spoonful to Greek yogurt or coconut yogurt and swirl it through with some berries and chopped nuts. Suddenly, an everyday bowl of yogurt tastes like dessert.

Drizzle it over smoothie bowls. Thin the spread with a teaspoon or two of warm water or coconut milk and drizzle it over smoothie bowls, oatmeal or chia pudding. Add shredded coconut and chopped almonds on top and you have got a beautiful breakfast.

Ingredients

  • 1 cup smooth natural almond butter
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut cream
  • 1/2 cup vanilla protein powder
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  • Add the almond butter, shredded coconut, coconut cream, protein powder, melted coconut oil, maple syrup, vanilla and sea salt to a food processor or high-speed blender.
    Blend until smooth and creamy, scraping down the sides as needed.
    Check the consistency. If the spread is too thick, add 1 tablespoon coconut cream at a time until it reaches your preferred texture.
    Taste and add a little extra maple syrup or honey if desired.
    Transfer to a clean glass jar or airtight container. Refrigerate for at least 30 minutes to allow the spread to thicken.
    Makes: Approximately 1½ cups
    To Serve
    Spread over:
    Whole-grain bread or toast
    Rice cakes
    Banana or apple slices
    Pancakes
    Waffles
    Or use it in:
    Protein balls and energy bites
    Homemade protein bars

    For a thinner consistency suitable for drizzling, stir in a little warm water or coconut milk.
    Store in an airtight container in the refrigerator for up to 1 week.
    The spread will firm up when chilled. Allow it to sit at room temperature for 5–10 minutes and stir before serving if necessary.
