Ingredients

  • 1 cup smooth natural almond butter
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut cream
  • 1/2 cup vanilla protein powder
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  • Add the almond butter, shredded coconut, coconut cream, protein powder, melted coconut oil, maple syrup, vanilla and sea salt to a food processor or high-speed blender.
    Blend until smooth and creamy, scraping down the sides as needed.
    Check the consistency. If the spread is too thick, add 1 tablespoon coconut cream at a time until it reaches your preferred texture.
    Taste and add a little extra maple syrup or honey if desired.
    Transfer to a clean glass jar or airtight container. Refrigerate for at least 30 minutes to allow the spread to thicken.
    Makes: Approximately 1½ cups

    For a thinner consistency suitable for drizzling, stir in a little warm water or coconut milk.
    Store in an airtight container in the refrigerator for up to 1 week.
    The spread will firm up when chilled. Allow it to sit at room temperature for 5–10 minutes and stir before serving if necessary.
