Coconut Butter Protein Cookies (No Bake)
Ingredients
- 1 cup coconut butter, softened– store bought or homemade recipe below in notes
- 1/2 cup almond butter or cashew butter
- 1/2 cup vanilla protein powder
- 1/2 cup almond flour
- 1/2 cup desiccated coconut
- 1/3 cup maple syrup or honey
- 1/4 cup rolled oats
- 1 teaspoon vanilla extract
- Pinch of sea salt
Optional Mix-Ins
- 1/4 cup white or dark chocolate chips
- 2 tablespoons chopped macadamia nuts
- Lemon or lime zest
Instructions
- Line a tray or plate with baking paper.If the coconut butter is solid, soften by placing the jar in warm water for a few minutes or give it a burst or two in the microwave.In a medium mixing bowl, stir together the softened coconut butter, nut butter, maple syrup, and vanilla until smooth.Add the protein powder, almond flour, shredded coconut, and sea salt.Stir until a soft cookie dough forms.Fold in any optional mix-ins.Scoop about 2 tablespoons of dough per cookie and roll into balls.Flatten gently with your palm or the back of a fork into a cookie shape.Refrigerate for 45–60 minutes until firm.Enjoy immediately or store chilled.Store in fridge for up to 1 week or freezer for up to 3 months.
